I have been wanting to make this for some time and finally did. It was absolutely delicious, comforting and one bowl was not enough! I timed the completion of the soup for my 16 year old foodie son to try as he is often ‘starving’ after school. He loved it and went back for more! Thanks Nagi. Another fabulous recipe. Minestronesoep. Ik zit de laatste tijd helemaal in de soep-fase en heb vandaag wederom een heel erg lekker soep recept voor je. Namelijk mijn minestronesoep recept. Een heerlijke gevulde Italiaanse maaltijdsoep met heel veel groenten. Absoluut een op en top verwarmend kommetje soep en ook nog eens heel eenvoudig om te maken.
Pasta is the last thing you add to minestrone soup. Also, if you’re not going to consume all the soup in one go, I highly recommend cooking some pasta in a separate pot and adding it just to the part you’re going to consume immediately. Otherwise pasta will make minestrone way too mushy.
